muffin monday : lemon poppy seed...squared

sooo, lucky for you, I'm posting two muffin recipes today {ta-da!}
yes, I am way productive.
haha.
recently I've tried 2 different lemon poppyseed muffin recipes:
one using a cake mix.
one from scratch.
so I'm sharing them both!

both of these recipes are from friends, and, as always, if you have one you would like to share just e-mail it to me!


Lemon Poppy Seed Muffins : Cake Mix Version
 1 pkg. yellow or lemon cake mix
1 pkg. instant vanilla pudding
4 eggs
1/2 c. oil
1 c. hot water
2 TBSP. poppy seeds

Mix together and bake for 15-20 minutes, at 350 degrees.
way simple.....way delish and soft.

Lemon Poppy Seed Muffins : From Scratch
 2 1/2 cups flour
1 TBSP. baking powder
1/2 cup sugar
4 TBSP. butter
1 large egg
1 cup milk
finely grated rind and juice of 1 lemon (or 1/4 c. lemon juice)
2 Tbsp. poppy seeds

Combine flour, baking powder and sugar. Melt butter and add egg, milk and lemon juice. Pour into dry ingredients. Mix well then add poppy seeds. (Add more milk if too dry) Bake at 375 for 25-30 minutes.

a quick/easy glaze to drizzle on top of these {before devouring} is just combine 1 cup pwd. sugar and 2-3 TBSP. lemon juice.
