Peach Cobbler

I don't know about you, but I'm a huge fan of simple + quick recipes.

Simple in that you only need to buy a couple ingredients at max from the store (everything else you already have on hand).
And quick in that it doesn't take long to mix up -- because usually if I'm baking something I want to eat it as soon as possible, 
let's all be real. :)

Last summer a friend of mine made this peach cobbler and I about died, it was SO good.
I love that it doesn't even use eggs and is super easy to throw together!
Plus the top gets crispy and golden like the outside part of an angel food cake, if you know what I'm talking about (#swoon).
I have made this with sliced apples before, or you could use other berries/fruit.

Peach Cobbler

+ 2 sticks of butter
+ 2 c flour
+ 1/2 tsp. salt
+ 3 tsp. baking powder
+ 2 c. sugar
+ 1.5 c. milk
+ frozen or canned peaches (if canned, drain the syrup)

Melt butter first, then mix together all ingredients except the peaches in a bowl, holding back 1/4 c. sugar. (I typically use a whisk as it helps blend everything together well) Pour batter into greased 9x13 pan, cover with peaches, sprinkle with remaining 1/4 c. sugar and cinnamon. Bake about 45 minutes or until browned @ 350 degrees. 

Eat while warm with milk (my fave) or ice cream!
