muffin monday : apple crunch

cheers for a new blog series!
I'm pumped about this!
now I can definetly guarantee that this won't happen every Monday...but occasionally you'll find a new muffin recipe on here.
soooo, any other muffin lovers out there {like me!}
this post is for you.
and we're kicking this off with.....
drumroll...
:: Ingredients ::
1 stick margarine
1 c. sugar
1 c. milk
2 eggs, beaten
3 c. flour
1 tsp. salt
6 tsp. baking powder
1 tsp. cinnamon
2  raw, chopped apples

:: Directions ::
Cream margarine and sugar. Add milk, and beaten egg, then add dry ingredients.  Peel, core, and dice the apples very fine and add. {one of those handy apple peeler-corer-dicer things works very well for this.  It cuts them into the spiral coil, and then I just cut up that coil into tiny, bite-sized pieces.)  Place in greased muffin pans{enter: non-stick cooking spray.}, or paper baking cups.


Topping:
2/3 cup brown sugar
1 tsp. cinnamon {or more, depends how cinnamon-y you want your topping}
Combine topping and sprinkle on top of each muffin.

Bake at 350 for 20-25 minutes.
then devour them.
{after letting them cool for a few minutes~they come out of the pan much easier that way.
its worth the wait.} :)
and you can only eat them if you have milk with them.
{if not, go out and buy milk. you can't have muffins w/o milk. it just doesn't work}
 
now given the fact that I only currently rotate 3 muffin recipes in our home....
I'm looking for more!

    Those look very simalar to the muffins Katelyn made us this morning.

    You are not the only one who has about three kinds of muffins that you make over and over. I am exited to see the rest of your recipes!
