muffin monday : applesauce

this is a legit vintage recipe here today.
we've been making these muffins for yeeeaaars.
now I sound like I'm really old.
:: Ingredients ::
2 sticks softened butter (or margarine)
2 c. sugar (I made these this morning and only did 1 cup and nobody noticed the difference!) 
2 eggs
1 tsp. vanilla
2 tsp. soda
1/2 tsp. nutmeg
1 T. cinnamon
4 c. flour
2 c. applesauce

:: Directions ::
Cream softened butter and sugar. Add eggs; beat well. Add vanilla and dry ingredients. Mix until just blended well, and then fold in applesauce. (do not over mix) 
Bake at 400 for 18-20 minutes.
(batter keeps well in fridge for 1 week)
{makes 24ish muffins}
